Delicious Zucchini Loaf

Ingredients

  • 1 c white sugar
  • 1 c brown sugar
  • 3 eggs
  • 1/2 c vegetable oil
  • 1/2 c applesauce *
  • 3 t vanilla bean paste
  • 3 c all-purpose flour
  • 1 t nutmeg
  • 1 t ground cinnamon
  • 2 t cardamom
  • 1 t baking powder
  • 1 t salt
  • 1 t baking soda
  • 2 c grated zucchini
  • 1 c chopped nuts pecans or walnuts

Instructions

  • Grease 2 loaf pans or 5-6 mini loaf plans.
  • Preheat oven to 325 ┬║.
  • Mix flour, salt, baking powder, soda, and spices together in a large bowl.
  • Beat eggs, oil, applesauce, vanilla, and sugar together in a medium bowl.
  • Add egg mixture to the dry┬áingredients and stir until combined.
  • Stir zucchini into the mixture along with the nuts until well combined.
  • Pour batter into prepared pans.
  • Bake for 40 to 60 minutes, or until tester inserted in the center comes out clean.
  • Mini-loaf pans take about 35-40 minutes.
  • Large sized loaves take about 55 minutes.
  • Cool in pan on rack for 20 minutes.
  • Remove bread from pan, and completely cool.
  • (*You can use 1 c. oil total if not using the applesauce)
