Cause if you’re fortunate enough to get your hands on some delicious peaches, this is a perfect way to use them.  Don’t you just love a juicy and perfectly sweet fresh peach?  I sure do!  But you’re gonna have to tell me all about these and how your family likes them!

As a matter of fact, if you’re like Belle—you’ll have a very hard time eating just one these delicious bars!  GOSH DANG!!  These things are tasty!  **(You’ve been warned.)

A buttery crumb layer topped with a sticky peach concoction and topped once more with those buttery crumbs.  If that’s not enough, you must top them off with the simple almond sugary glaze. MMM.

We were out in the yard one day with the grandkids when one of their friends stopped and asked if they wanted some fresh picked peaches.

Those kids devoured three peaches each in less than 5 minutes, I kid you not!  When I bit into one, I knew I’d best hide the rest if we wanted any for later.

Lucky for me, they left them here and I was more than happy to take them off their hands.

Amazing Glazed Peach Crumb Bars

These bars are easy to prepare.  Especially if you have a food processor and parchment paper!  Seriously, what did we do before parchment paper?

I must be the biggest fan of that stuff.  One of my island drawers is solely dedicated to parchment paper sheets- no joke!  But back to the recipe–which is probably why you’re here–right?  Lol

Glazed Peach Crumb Bars

Ingredients

For the crust:

  • 1 c sugar
  • 3 c all-purpose flour
  • 1 t baking powder
  • ½ t salt
  • ¼ t ground cinnamon
  • 1 c unsalted cold butter cut into cubes
  • 1 large egg lightly beaten
  • 1 t almond extract

For the peach layer:

  • ½ c granulated sugar
  • 1 T cornstarch
  • ¼ t ground cinnamon
  • 5 large peaches peeled and diced
  • 1 t fresh lemon juice

Icing:

  • 1 c powdered sugar
  • ¼ t almond extract
  • 1 T milk

Instructions

  • Preheat oven to 350°F. Lightly grease or line with parchment paper a 13x9-inch glass baking pan and set aside.

For the crust:

  • In a food processor- pulse together sugar, flour, baking powder, salt and cinnamon. Combine with the butter until the mixture resembles coarse sand. Add the lightly beaten egg & extract and mix until the dough starts to hold together, but is still crumbly.
  • Press (gently) a third of the dough into the prepared pan.

For the peach mixture:

  • In a medium mixing bowl, whisk together the sugar, cornstarch and cinnamon. Add the diced peaches and toss to combine. Drizzle the lemon juice over the peaches and toss to coat. Pour the peach mixture over the crust and spread evenly. Using your hands, press together handfuls of the remaining crumb topping to create clumps. Scatter the clumps and remaining crumbled topping over the fruit layer leaving some peaches showing through.
  • Bake for 45-50 minutes or until lightly browned. Cool completely then chill before cutting.

To prepare the icing:

  • Whisk together the powdered sugar, almond extract and milk. Drizzle on the bars when cooled or just before serving.
